  • 2 cans (12.5 oz each) chicken breast, drained and flaked (or 3 cups shredded rotisserie chicken)
  • 1 can (15 oz) whole kernel corn, drained
  • 1 block (8 oz) cream cheese, softened
  • 1/2 cup sour cream
  • 1 can (4 oz) diced green chiles
  • 2 cups shredded cheddar cheese (or pepper jack for extra kick)
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon garlic powder
  • Sliced green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×9 inch baking dish or a medium-sized oven-safe skillet with non-stick cooking spray to ensure easy serving and cleanup later.
  2. In a large mixing bowl, combine the softened cream cheese and sour cream. Use a spatula or hand mixer to blend them together until the mixture is smooth and free of large lumps. Stir in the taco seasoning and garlic powder.
  3. Add the drained chicken, corn, green chiles, and 1.5 cups of the shredded cheese to the cream cheese mixture. Fold everything together gently until the chicken and corn are evenly coated with the creamy base.
  4. Spread the mixture evenly into your prepared baking dish. Sprinkle the remaining 1/2 cup of shredded cheese over the top. Place the dish in the oven and bake for 20 minutes, or until the cheese is melted and the edges are bubbling.
  5. Remove the dip from the oven and let it sit for a few minutes. Top with sliced green onions for a pop of color and fresh flavor. Serve warm with your favorite dippers.
