  • 1 can (16 oz) refried beans
  • 1 cup sour cream
  • 1 package (8 oz) cream cheese, softened
  • 2 cups shredded cheddar cheese (divided)
  • 1 tablespoon taco seasoning
  • 1 can (4 oz) diced green chiles
  • 1/4 cup diced green onions (for garnish)
  • Optional: Sliced jalapeños for extra heat

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish or a medium-sized oven-safe skillet with cooking spray to prevent sticking.
  2. In a medium mixing bowl, combine the softened cream cheese, sour cream, and taco seasoning. Stir until the mixture is smooth and well combined.
  3. Add the refried beans and the diced green chiles to the creamy mixture. Fold them in gently until the beans are evenly distributed throughout the cream base.
  4. Stir in 1 cup of the shredded cheddar cheese. Spread the mixture evenly into your prepared baking dish. Sprinkle the remaining 1 cup of cheese over the top of the dip.
  5. Place the dish in the oven and bake for 20 minutes, or until the cheese is completely melted and the edges are starting to bubble.
  6. Remove from the oven and let it sit for 2 to 3 minutes. Garnish with diced green onions and optional jalapeños before serving warm.
