1/2 cup vanilla protein powder (whey or plant-based)
1/2 cup creamy almond butter
1/4 cup unsweetened shredded coconut
2 tablespoons ground flax seeds
1 tablespoon honey or maple syrup
1/4 teaspoon sea salt
Extra shredded coconut for rolling
Instructions
Step 1: Prep the Apricots. Start by roughly chopping the dried apricots. If your apricots are very dry and hard, soak them in warm water for about 10 minutes, then pat them dry with a paper towel before using.
Step 2: Combine the Ingredients. Place the chopped apricots, almond butter, protein powder, ground flax seeds, honey, and sea salt into a food processor. Pulse the mixture until it forms a thick, sticky dough that holds together when pinched between your fingers.
Step 3: Form the Balls. Scoop about one tablespoon of the mixture at a time and roll it between your palms to create a smooth ball. Repeat this process until all the dough is used. You should end up with approximately 12 balls.
Step 4: Coat with Coconut. Place the extra shredded coconut in a small, shallow bowl. Roll each energy ball in the coconut until it is evenly coated. This adds a nice texture and keeps the balls from sticking to each other in storage.
Step 5: Chill to Set. Place the finished energy balls on a parchment-lined plate or in a glass container. Refrigerate them for at least 30 minutes to allow them to firm up before eating.
