  • 9 oz package cheese tortellini (refrigerated)
  • 12 slices Genoa salami, folded into quarters
  • 12 fresh mozzarella pearls (ciliegine)
  • 12 cherry tomatoes
  • 12 marinated artichoke hearts, halved if large
  • 12 pitted green or Kalamata olives
  • 1/2 cup Italian vinaigrette dressing
  • Fresh basil leaves
  • Balsamic glaze for drizzling

Instructions

  1. Step 1: Cook the Tortellini – Cook the cheese tortellini in a large pot of boiling salted water according to the package directions. Be careful not to overcook them; you want them to be al dente so they stay firm on the skewers. Drain the pasta and immediately rinse with cold water to stop the cooking process.
  2. Step 2: Marinate the Ingredients – In a medium bowl, toss the cooked tortellini and the mozzarella pearls with the Italian vinaigrette. Let them sit for about 10 minutes to soak up the flavor while you prepare the other ingredients. This adds an extra layer of zest to the skewers.
  3. Step 3: Prepare the Skewers – Gather your 6-inch wooden skewers. To assemble, start by threading a cherry tomato onto the skewer. Follow it with a folded slice of salami, a marinated tortellini, a fresh basil leaf, a mozzarella pearl, an artichoke heart, and finally an olive at the end.
  4. Step 4: Final Touches – Arrange the completed skewers on a large serving platter. Just before serving, lightly drizzle the balsamic glaze over the top for a sweet and tangy finish and a touch of elegance.
