  • 4 to 5 lbs beef brisket (flat cut or point)
  • 2 tablespoons smoked paprika
  • 1 tablespoon brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • 1 cup beef broth
  • 2 tablespoons liquid smoke
  • 1 cup of your favorite BBQ sauce
  • 8 brioche buns, lightly toasted
  • Pickle slices and thinly sliced red onions for topping

Instructions

  1. Step 1: Seasoning the Brisket: In a small bowl, combine the smoked paprika, brown sugar, garlic powder, onion powder, salt, pepper, and cayenne. Pat the brisket dry with paper towels. Rub the spice mixture generously over all sides of the meat, pressing it in so it sticks well. This creates a flavorful crust during the cooking process.
  2. Step 2: Preparing the Slow Cooker: Place the seasoned brisket into your slow cooker. If the brisket is too large to fit, you can cut it in half. In a small measuring cup, mix the beef broth and liquid smoke together. Pour the liquid around the sides of the meat, being careful not to wash off the dry rub from the top of the brisket.
  3. Step 3: Slow Cooking: Cover the slow cooker with its lid. Set it to “Low” and cook for 8 to 10 hours. You want the meat to be “fork-tender,” meaning a fork slides in and out of the meat with absolutely no resistance. Avoid opening the lid during the first 6 hours to keep the heat and moisture trapped inside.
  4. Step 4: Resting and Shredding: Once the meat is cooked, carefully remove it from the slow cooker and place it on a large cutting board or a baking sheet. Cover it loosely with foil and let it rest for about 15 to 20 minutes. This allows the juices to redistribute. After resting, use two forks to shred the beef or a sharp knife to slice it thinly against the grain.
  5. Step 5: Saucing and Assembling: In a large bowl, toss the shredded or sliced beef with about 1/2 cup of the BBQ sauce and a splash of the cooking liquid from the slow cooker. Pile a generous portion of the beef onto the bottom half of a toasted brioche bun. Add an extra drizzle of BBQ sauce if desired, then top with pickles and red onions before closing the sandwich.
