1.5 lbs boneless, skinless chicken thighs or breasts
2 cups high-quality apple cider (not apple cider vinegar)
2 medium apples (Gala or Honeycrisp), sliced into wedges
1 large yellow onion, thinly sliced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons cornstarch mixed with 2 tablespoons cold water (optional for thickening)

Instructions
Step 1: Prepare the Base – Place the sliced onions and minced garlic at the bottom of the slow cooker liner. This creates a flavorful bed for the chicken and prevents it from sticking to the bottom.
Step 2: Season the Chicken – Pat the chicken dry with paper towels. Rub both sides of the chicken with salt, pepper, dried thyme, and dried rosemary. Place the seasoned chicken on top of the onions.
Step 3: Add Apples and Cider – Arrange the apple wedges around and on top of the chicken pieces. Carefully pour the apple cider over everything, ensuring the chicken is mostly submerged in the liquid.
Step 4: Slow Cook – Cover the slow cooker with its lid. Cook on LOW for 5 to 6 hours or on HIGH for 3 to 4 hours. The chicken should be very tender and reach an internal temperature of 165°F (74°C).
Step 5: Thicken the Sauce – If you prefer a thicker gravy, remove the chicken and apples to a serving plate. Turn the slow cooker to HIGH. Stir in the cornstarch and water mixture. Let it bubble for 5-10 minutes until the sauce thickens, then pour it back over the chicken.
