  • 1.5 lbs chicken breast or thighs, cut into bite-sized pieces
  • 1.5 cups long-grain white rice, rinsed
  • 3 cups chicken broth
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 small yellow onion, finely diced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Step 1: Sear the Chicken. In a large skillet or pot, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add them to the pan and cook until browned on all sides, about 5-6 minutes. Remove the chicken from the pan and set aside on a plate.
  2. Step 2: Sauté the Aromatics. Lower the heat to medium and add the butter to the same pan. Once melted, add the diced onion and cook for 3 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn the garlic.
  3. Step 3: Toast the Rice. Add the rinsed rice to the pan with the onions and garlic. Stir well to coat the rice in the butter and oil. Let it cook for about 2 minutes; this toasting process adds a wonderful nutty flavor and helps keep the grains separate.
  4. Step 4: Simmer the Dish. Pour in the chicken broth and add the Italian seasoning. Return the chicken and any juices from the plate back into the pan. Bring the mixture to a boil, then reduce the heat to low. Cover the pan with a tight-fitting lid and simmer for 15-18 minutes, or until the liquid is absorbed and the rice is tender.
  5. Step 5: Finish with Cheese. Remove the pan from the heat. Stir in the grated Parmesan cheese until it is melted and the rice looks creamy. Taste and add more salt or pepper if needed. Sprinkle with fresh parsley before serving.
