  • 1 medium head of green cabbage, shredded or chopped
  • 2 large carrots, sliced into rounds
  • 2 stalks of celery, chopped
  • 1 large yellow onion, diced
  • 3 cloves of garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 6 cups vegetable broth (low sodium preferred)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Cook for about 5 to 7 minutes until the onions are translucent and the vegetables begin to soften slightly.
  2. Stir in the minced garlic, dried oregano, and dried basil. Sauté for another 1 minute until the garlic becomes fragrant, being careful not to let it burn.
  3. Add the shredded cabbage to the pot. Pour in the vegetable broth and the diced tomatoes with their juices. Stir everything together so the cabbage is well-distributed.
  4. Bring the soup to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 25 to 30 minutes. The soup is ready when the cabbage and carrots are completely tender.
  5. Turn off the heat. Stir in the fresh lemon juice, salt, and black pepper. Taste and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
