4 large Russet or Yukon Gold potatoes, peeled and thinly sliced
1 medium yellow onion, diced
2 cloves garlic, minced
1 cup beef broth
1/2 cup heavy cream
2 cups shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme or oregano

Instructions
Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter or non-stick cooking spray to prevent sticking.
In a large skillet over medium-high heat, cook the ground beef and diced onions. Use a wooden spoon to break the meat into small crumbles. Continue cooking until the beef is fully browned and the onions are soft. Add the minced garlic during the last minute of cooking.
Drain any excess grease from the skillet. Stir in the salt, black pepper, and dried thyme. Pour in the beef broth and heavy cream. Let the mixture simmer for 3 to 5 minutes until it thickens slightly into a light sauce.
Place half of the thinly sliced potatoes in an even layer at the bottom of the prepared baking dish. Pour the beef and sauce mixture over the potatoes, spreading it out evenly. Top with the remaining sliced potatoes.
Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 30 minutes. This helps the potatoes steam and become tender.
Remove the foil and check the potatoes with a fork. If they are tender, sprinkle the shredded cheddar cheese evenly over the top. Bake uncovered for another 10 to 15 minutes until the cheese is melted, bubbly, and slightly golden brown.
Remove the dish from the oven and let it rest for about 5 to 10 minutes. This allows the sauce to set, making it easier to serve clean slices.
