1.5 lbs boneless skinless chicken breasts, sliced into even cutlets
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
3 tablespoons unsalted butter
5 cloves garlic, minced
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh thyme, chopped
1/2 cup chicken broth or dry white wine
1 tablespoon fresh parsley, chopped for garnish
1 tablespoon lemon juice
Instructions
Pat the chicken breasts dry with paper towels. This is crucial for getting a good sear. Season both sides of the chicken cutlets generously with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken to the pan. Cook for about 5 to 7 minutes per side until they are golden brown and reach an internal temperature of 165°F (74°C). Remove the chicken from the skillet and set aside on a plate.
Reduce the skillet heat to medium. Add the butter to the same pan. Once melted, stir in the minced garlic, rosemary, and thyme. Sauté for about 1 minute until the garlic is fragrant but not browned.
Pour in the chicken broth or white wine. Use a wooden spoon to scrape up all the brown bits from the bottom of the pan. Let the liquid simmer for 2 to 3 minutes until it reduces slightly.
Return the chicken and any accumulated juices back into the skillet. Spoon the garlic herb butter sauce over the chicken. Stir in the lemon juice and cook for 1 more minute to heat everything through.
Remove from heat and sprinkle with fresh parsley. Serve immediately while the sauce is warm and the chicken is juicy.
