Start by preheating your smoker to 225°F (107°C). Ensure your water pan is filled if your smoker uses one, and add your choice of wood. Fruitwoods like apple or cherry pair excellently with chicken for a mild, sweet smoke profile.
Pat the chicken ribs dry with paper towels. This helps the skin or outer layer crisp up. Lightly coat the chicken with olive oil or a thin layer of mustard to act as a binder. Generously sprinkle your BBQ dry rub over all sides of the meat, pressing it in slightly so it adheres well.
Place the seasoned chicken ribs directly on the smoker grates, leaving space between each piece for air and smoke to circulate. Close the lid and smoke for approximately 1.5 to 2 hours. Use an instant-read thermometer to check that the internal temperature reaches 160°F (71°C).
Once the chicken reaches 160°F, use a silicone brush to apply a layer of BBQ sauce to each rib. Close the lid and let them smoke for another 15 minutes. This allows the sauce to “set” and become tacky and caramelized. The final internal temperature should be 165°F (74°C).
Remove the chicken ribs from the smoker and place them on a platter. Tent them loosely with foil and let them rest for 5 to 10 minutes. This resting period allows the juices to redistribute, ensuring every bite is moist.
