1.5 lbs boneless, skinless chicken breasts, sliced into thin strips
2 large bell peppers (red and green), sliced into strips
1 large yellow onion, thinly sliced
2 tablespoons olive oil
1 packet (1 oz) fajita seasoning or homemade blend
4 large hoagie rolls
4–8 slices of provolone or pepper jack cheese
1 tablespoon butter (for toasting rolls)

Instructions
Begin by slicing your chicken breasts against the grain into thin, even strips. Thinly slice your bell peppers and onions as well. Having everything prepped and ready before you turn on the stove ensures the cooking process goes smoothly and nothing overcooks.
Heat one tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced peppers and onions. Sauté for about 5 to 7 minutes, stirring occasionally, until the vegetables are tender-crisp and have slight char marks. Remove the vegetables from the skillet and set them aside on a plate.
In the same skillet, add the remaining tablespoon of olive oil. Add the chicken strips in a single layer. Cook for 6 to 8 minutes, turning occasionally, until the chicken is golden brown and cooked through (internal temperature of 165°F).
Return the cooked vegetables to the skillet with the chicken. Sprinkle the fajita seasoning over the mixture and add a splash of water (about 2 tablespoons) to help the spices coat everything evenly. Toss well and cook for another 2 minutes until the sauce has thickened and everything is hot.
While the chicken finishes, split the hoagie rolls open and lightly butter the insides. Place them face down in a separate pan or under a broiler for 1 to 2 minutes until golden brown. This prevent the bread from becoming soggy once the filling is added.
Pile the chicken and vegetable mixture generously into each toasted hoagie roll. Lay the cheese slices over the hot filling. If you want the cheese extra melty, place the assembled hoagies under the broiler for 30 seconds until the cheese is bubbling and slightly browned.
