1 can (15 oz) chili (with or without beans, based on preference)
1 ½ cups shredded sharp cheddar cheese
Optional: diced white onions
Optional: sliced jalapeños
Optional: yellow mustard
Instructions
Preheat your grill to medium heat or use a large skillet on the stovetop. Cook the hot dogs for 5 to 7 minutes, turning occasionally, until they are heated through and have slight char marks on the outside.
While the hot dogs are cooking, pour the chili into a small saucepan. Heat it over medium-low heat, stirring occasionally, until it is bubbling and hot. Keep it on low heat until you are ready to assemble.
Open the hot dog buns and place them face-down on the grill or skillet for about 30 to 60 seconds. Toasting the buns adds a nice crunch and prevents them from getting soggy once the chili is added.
Place one cooked hot dog into each toasted bun. Use a spoon to generously ladle the warm chili over the center of each hot dog.
Immediately sprinkle the shredded cheddar cheese over the hot chili so that it begins to melt. Add your choice of optional toppings like diced onions, jalapeños, or a drizzle of mustard. Serve immediately while hot.
