  • 1 lb chicken breast, cut into small bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded Mexican blend cheese
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Optional: Sour cream, avocado slices, or salsa

Instructions

  1. In a medium bowl, toss the diced chicken pieces with the olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Ensure every piece of chicken is evenly coated with the spice mixture for maximum flavor.
  2. Place a large skillet over medium-high heat. Once the pan is hot, add the chicken in a single layer. Cook for about 6 to 8 minutes, stirring occasionally, until the chicken is golden brown and cooked through to an internal temperature of 165°F (74°C).
  3. While the chicken is cooking, warm your tortillas. You can do this by placing them directly over a low gas flame for a few seconds per side using tongs, or by heating them in a clean, dry skillet until they are soft and slightly charred.
  4. Lay the warm tortillas on a clean surface. Distribute the cooked chicken evenly among the tortillas. Top each taco with shredded lettuce, diced tomatoes, cheese, and fresh cilantro. Serve immediately with lime wedges on the side for squeezing over the top.
