Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray to prevent the meatballs from sticking during the baking process.
In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, dried oregano, salt, and black pepper. Use your hands or a fork to mix the ingredients until just combined. Be careful not to overmix, as this can make the meatballs tough.
Roll the meat mixture into small balls, about 1 to 1.5 inches in diameter. You should get approximately 12 to 16 meatballs. Place them on the prepared baking sheet and bake for 15 to 18 minutes, or until they are cooked through and browned on the outside.
While the meatballs are baking, pour the marinara sauce into a large skillet or saucepan over medium heat. Once the meatballs are out of the oven, carefully transfer them into the sauce. Stir gently to coat and let them simmer for 5 minutes so the flavors meld together.
Slice the hoagie rolls open lengthwise, being careful not to cut all the way through. If desired, brush the inside with melted butter. Place 3 to 4 meatballs and a generous amount of sauce into each roll.
Top each sub with a generous handful of shredded mozzarella cheese. Place the assembled subs back on the baking sheet and broil for 2 to 3 minutes, or until the cheese is bubbly and golden brown. Garnish with fresh parsley and serve immediately.
