  • 5 cups mixed berries (blueberries, raspberries, blackberries, and sliced strawberries)
  • 2 tablespoons maple syrup (for the filling)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch or arrowroot powder
  • 1 cup rolled oats (certified gluten-free if necessary)
  • 1/2 cup almond flour
  • 1/4 cup chopped walnuts or pecans
  • 1/3 cup melted coconut oil or vegan butter
  • 1/4 cup maple syrup (for the topping)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish or a 9-inch pie plate with a small amount of coconut oil to prevent sticking.
  2. In a large mixing bowl, combine the mixed berries, 2 tablespoons of maple syrup, lemon juice, and cornstarch. Toss gently until the berries are evenly coated. Pour the mixture into your prepared baking dish and spread it out into an even layer.
  3. In the same bowl (no need to wash it!), combine the oats, almond flour, chopped nuts, cinnamon, and salt. Pour in the melted coconut oil and the remaining 1/4 cup of maple syrup. Stir until the mixture is crumbly and all the dry ingredients are moistened.
  4. Evenly sprinkle the oat mixture over the top of the berries. Use your fingers to break up any large clumps so the topping covers the fruit completely.
  5. Place the dish in the oven and bake for 35 to 40 minutes. The crumble is done when the fruit juices are bubbling around the edges and the topping has turned a beautiful golden brown. Remove from the oven and let it cool for at least 10 minutes before serving.
