8 ounces cream cheese, softened to room temperature
1/2 cup powdered sugar
1 teaspoon pure vanilla extract
1 cup heavy whipping cream, cold
1 cup fresh berries (strawberries, blueberries, or raspberries)

In a small mixing bowl, combine the graham cracker crumbs and the melted butter. Stir until the crumbs are evenly moistened and look like wet sand. Divide half of this mixture among four glass jars or dessert cups, pressing down gently to form an even base.
In a large mixing bowl, beat the softened cream cheese with the powdered sugar and vanilla extract using a hand mixer or stand mixer. Continue mixing on medium speed until the mixture is completely smooth and free of any lumps.
In a separate chilled bowl, beat the cold heavy whipping cream until stiff peaks form. Be careful not to overbeat, or it will become grainy. Stiff peaks mean the cream holds its shape when you lift the whisk.
Gently fold the whipped cream into the cream cheese mixture using a rubber spatula. Use a slow, circular motion to keep the filling light and airy. Do not stir vigorously, as you want to maintain the volume of the whipped cream.
Spoon or pipe a layer of the cheesecake filling over the graham cracker base in each glass. Add a layer of fresh berries, then repeat the layers with the remaining crumbs and cheesecake filling. Finish with a final topping of fresh berries.
Place the parfaits in the refrigerator for at least 30 minutes before serving. This allows the filling to set and the flavors to meld together. If you have time, chilling for two hours provides the best texture.
