  • 6 to 8 large Granny Smith or Honeycrisp apples (peeled, cored, and sliced)
  • 1/2 cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup cold unsalted butter (cut into small cubes)
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×9 inch baking dish or a similar sized casserole dish with butter or non-stick cooking spray to ensure the fruit doesn’t stick.
  2. In a large mixing bowl, combine the sliced apples, lemon juice, 1/2 cup of maple syrup, cinnamon, and nutmeg. Toss everything together until the apples are evenly coated with the syrup and spices. Pour the mixture into your prepared baking dish and spread it out evenly.
  3. In another bowl, whisk together the rolled oats, flour, brown sugar, and salt. Add the cold, cubed butter. Use a pastry cutter or your clean fingertips to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  4. Sprinkle the oat topping evenly over the apple mixture in the baking dish. Do not press the topping down; keeping it loose helps it become crispier during the baking process.
  5. Place the dish in the preheated oven and bake for 40 to 45 minutes. You will know it is done when the topping is golden brown and the apple juices are bubbling around the edges. If the topping browns too quickly, you can loosely cover it with foil for the last 10 minutes.
  6. Remove the crisp from the oven and let it sit for at least 10 to 15 minutes before serving. This allows the juices to thicken slightly, making it easier to scoop.
