  • 2 scoops chocolate whey or casein protein powder
  • 1/2 cup oat flour (or almond flour)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce or mashed banana
  • 1/4 cup liquid egg whites
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup or honey
  • 1/4 cup dark chocolate chips
  • 1 tablespoon coconut oil or butter (for the skillet)

Instructions

  1. Preheat your oven to 350°F (175°C). Take a 6-inch or 8-inch oven-safe cast iron skillet and grease it lightly with coconut oil or butter to ensure the brownie doesn’t stick.
  2. In a medium-sized mixing bowl, whisk together the protein powder, oat flour, cocoa powder, baking powder, and salt. Make sure there are no large clumps of protein powder for a smooth texture.
  3. In a separate bowl, stir together the applesauce, egg whites, vanilla extract, and maple syrup. Once combined, slowly pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix, as this can make the protein brownie tough.
  4. Gently fold in half of the dark chocolate chips. Pour the batter into your prepared skillet and smooth the top with a spatula. Sprinkle the remaining chocolate chips over the top for a professional look.
  5. Place the skillet in the oven and bake for 15 to 20 minutes. You want the edges to be set while the center remains slightly soft. A toothpick inserted into the edge should come out clean, but the center should stay moist.
  6. Remove the skillet from the oven and let it sit for about 5 minutes. This allows the brownie to set properly while remaining warm and gooey for serving.
