  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsweetened cocoa powder (natural or Dutch-processed)
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch square baking pan with butter or non-stick spray, or line it with parchment paper leaving an overhang on the sides for easy removal.
  2. In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined. The mixture may look a bit grainy, but that is perfectly normal.
  3. Add the eggs and vanilla extract to the butter mixture. Whisk vigorously for about one to two minutes. This helps create that iconic shiny, crackly top on the brownies.
  4. Gently sift in the cocoa powder, flour, and salt. Use a spatula to fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix, as this can make the brownies tough.
  5. Fold in the chocolate chips until they are evenly distributed throughout the thick batter. If you like, you can save a small handful to sprinkle on top before baking.
  6. Spread the batter evenly into the prepared pan. Bake for 22-25 minutes. A toothpick inserted into the center should come out with a few moist crumbs attached, but not wet batter.
  7. Allow the brownies to cool completely in the pan on a wire rack. This is the hardest part, but cooling allows the fudgy structure to set properly. Once cool, lift them out using the parchment paper and cut into 16 squares.
