  • 1 cup unsalted butter, softened to room temperature
  • 1 1/2 cups granulated white sugar
  • 2 large eggs, room temperature
  • 1 tablespoon fresh lime zest
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon coconut extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shredded sweetened coconut
  • 1 cup powdered sugar (for glaze)
  • 12 tablespoons additional lime juice (for glaze)

Instructions

  1. Start by preheating your oven to 350°F (175°C). Line a 9×9 inch square baking pan with parchment paper, leaving a slight overhang on the sides. This makes it much easier to lift the bars out once they have cooled.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. This usually takes about 2 to 3 minutes using an electric hand mixer or a stand mixer.
  3. Add the eggs one at a time, beating well after each addition. Mix in the lime zest, lime juice, and coconut extract. Ensure everything is well incorporated and the batter looks smooth.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add these dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix, as this can make the bars tough.
  5. Gently fold in the shredded coconut using a spatula. Spread the thick batter evenly into the prepared baking pan. Bake for 22 to 25 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
  6. While the bars are cooling, whisk together the powdered sugar and enough lime juice to reach a drizzling consistency. Once the bars are completely cool, pour the glaze over the top and sprinkle with a little extra lime zest or coconut if desired. Cut into 16 squares and serve.
