Step 1: Preheat and Prepare – Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats to prevent the cookies from sticking and to ensure even browning.
Step 2: Cream Butter and Sugars – In a large mixing bowl, beat the softened butter, 3/4 cup granulated sugar, and brown sugar together using a hand mixer or stand mixer. Beat on medium-high speed for about 2-3 minutes until the mixture is light, fluffy, and well-combined.
Step 3: Mix in Wet Ingredients – Add the blotted pumpkin puree, the egg yolk, and the vanilla extract to the butter mixture. Continue to beat until the ingredients are fully incorporated, scraping down the sides of the bowl as needed.
Step 4: Combine Dry Ingredients – In a separate medium bowl, whisk together the all-purpose flour, cream of tartar, baking soda, salt, and pumpkin pie spice. This ensures the leavening agents and spices are evenly distributed throughout the dough.
Step 5: Form the Cookie Dough – Gradually add the dry ingredients to the wet ingredients while mixing on low speed. Mix just until the flour streaks disappear. Be careful not to overmix, as this can make the cookies tough.
