Step 1: Preheat and Prepare – Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners. This ensures the cupcakes don’t stick and makes cleanup a breeze.
Step 2: Mix Dry Ingredients – In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Make sure there are no large lumps of cocoa remaining for a smooth batter.
Step 3: Combine Wet Ingredients – Add the egg, milk, vegetable oil, and vanilla extract to the dry ingredients. Use a hand mixer or a whisk to beat the mixture on medium speed until well combined. The batter will be quite thick at this stage.
Step 4: Incorporate Boiling Water – Carefully pour the boiling water into the batter. Stir by hand until the mixture is smooth. The boiling water helps dissolve the cocoa powder and creates a thin, silky batter that results in a moist crumb. If using chocolate chips, fold them in now.
Step 5: Fill and Bake – Divide the batter evenly among the prepared muffin liners, filling each about two-thirds full. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Step 6: Cool and Frost – Allow the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Once they are cold to the touch, frost them with your favorite chocolate fudge frosting.
