2 tablespoons pumpkin puree (canned, not pumpkin pie filling)
1 to 2 tablespoons maple syrup or brown sugar
1/2 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
2 shots espresso or 1/2 cup very strong brewed coffee, cooled
1 cup milk of your choice (whole, oat, or almond milk work best)
1 cup ice cubes

Instructions
In a small saucepan or a microwave-safe bowl, combine the pumpkin puree, maple syrup, and pumpkin pie spice. Heat the mixture gently for about 1 minute. This step is important because heating the puree with the spices helps “bloom” the flavors and removes the raw taste of the pumpkin.
Remove the pumpkin mixture from the heat and stir in the vanilla extract. Pour in your hot espresso or strong brewed coffee. Stir or whisk the mixture vigorously until the pumpkin base is fully dissolved into the liquid and no clumps remain.
Fill a tall glass with approximately one cup of ice cubes. If you want your drink to stay cold longer without diluting, you can use coffee ice cubes instead of regular water ice cubes.
Pour the pumpkin-coffee mixture over the ice in the glass. Slowly pour in your choice of milk. You will see beautiful swirls as the milk blends with the spiced coffee base.
Give the drink a gentle stir with a long spoon to ensure the flavors are distributed evenly. If desired, top with a generous amount of whipped cream and an extra sprinkle of pumpkin pie spice or cinnamon for a professional finish.
