2 cups cold brew coffee (store-bought or homemade)
1/4 cup heavy cream
2 tablespoons milk (whole milk or oat milk works best)
1 tablespoon pumpkin puree (not pumpkin pie filling)

1/2 teaspoon pumpkin pie spice

Step 1: Prepare the Pumpkin Cream Base. In a small saucepan over low heat, whisk together the pumpkin puree, maple syrup, and pumpkin pie spice. Heat for about 2 to 3 minutes until the mixture is well combined and fragrant. This helps remove the “raw” taste of the pumpkin and blooms the spices.
Step 2: Mix the Cream and Vanilla. Remove the pumpkin mixture from the heat and stir in the heavy cream, milk, and vanilla extract. Whisk vigorously until the mixture is smooth. If you prefer a very smooth texture, you can pour this mixture through a fine-mesh strainer to remove any small pumpkin fibers.
Step 3: Froth the Cream. Use a handheld milk frother or a blender to froth the pumpkin cream mixture for about 30 seconds. You want it to be thickened and slightly aerated, creating a light foam that will sit beautifully on top of your coffee.
Step 4: Prepare the Coffee. Fill two tall glasses with ice cubes. Pour 1 cup of cold brew coffee into each glass, leaving about two inches of space at the top for the pumpkin cream.
Step 5: Assemble and Serve. Slowly pour the frothed pumpkin cream over the back of a spoon onto the top of the cold brew. This helps the cream sit on top and creates a gorgeous cascading effect as it slowly mixes with the coffee. Sprinkle a tiny pinch of extra pumpkin pie spice on top for garnish.
