1/2 cup strong brewed coffee or 1–2 shots of espresso
2 tablespoons pumpkin puree (not pumpkin pie filling)
1 tablespoon monk fruit sweetener or stevia (adjust to taste)
1/2 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
A pinch of salt

Instructions
In a small saucepan over medium heat, whisk together the milk, pumpkin puree, sweetener, pumpkin pie spice, and the pinch of salt. Whisking early helps the pumpkin incorporate smoothly into the liquid.
Heat the mixture until it is hot but not boiling. Stir frequently to prevent the milk from scorching on the bottom of the pan. You should start to smell the warm spices as the liquid heats through.
Remove the saucepan from the heat and stir in the vanilla extract. For a true latte experience, use a handheld milk frother or a whisk to create a light, airy foam on the surface of the milk mixture.
Pour your hot brewed coffee or espresso shots into a large mug. Gently pour the heated pumpkin milk mixture over the coffee. If you frothed the milk, use a spoon to hold back the foam, then top the drink with the foam at the end.
Sprinkle a tiny bit of extra pumpkin pie spice or cinnamon on top. If you are feeling extra indulgent, add a dollop of sugar-free whipped cream before serving immediately.
