  • 1 cup unsweetened oat milk
  • 1/2 cup water
  • 1 black chai tea bag (or 1 tablespoon loose leaf chai tea)
  • 2 tablespoons canned pumpkin puree
  • 1 tablespoon maple syrup (adjust to taste)
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • A pinch of sea salt
  • Optional: Dairy-free whipped cream for topping

Instructions

  1. In a small saucepan, bring the water to a gentle boil. Remove from heat, add the chai tea bag, and let it steep for about 3 to 5 minutes. You want a very strong tea concentrate so the flavor shines through the oat milk.
  2. Remove the tea bag and squeeze out any excess liquid. Place the saucepan back on medium-low heat. Whisk in the oat milk, pumpkin puree, maple syrup, pumpkin pie spice, and sea salt. Stir constantly to ensure the pumpkin puree blends smoothly into the liquid.
  3. Gently heat the mixture until it is steaming but not boiling. Boiling oat milk can sometimes change its texture. If you have a handheld milk frother, use it now to create a light, airy foam on the surface. If not, a vigorous whisking will do the trick.
  4. Stir in the vanilla extract at the very end to preserve its delicate aroma. Pour the steaming pumpkin chai into your favorite mug.
